Fresh Red Beet Recipe

Did you know beets are known to lower cholesterol levels in the body and have proven anti-aging effects? Incorporate these highly nutritious veggies into your diet with Kip Wood’s  delicious and fresh Red Beet Recipe inspired by his garden!

INGREDIENTS
  • 1 tbsp olive oil
  • 1 tbsp balsamic vinegar
  • 1 tomato
  • 1 red( or golden) beet
  • 1/2 cup walnuts
  • Small bunch of fresh Basil, chopped
  • Salt to taste

I like to steam the veggies until just tender but still have a little crunch to them.
Then toast walnuts for about 8-10 minutes.
Add olive oil, balsamic vinegar and a little salt.
And add a little goat cheese if you like.
