Gazpacho

Ingredients (4 people)

  • 2 lbs of fresh tomatoes
  • ½ small onion
  • 1 small green pepper
  • 1 small cucumber
  • ½ cup of  olive oil
  • 2 tbs vinegar
  • 1 clove of garlic
  • just a little bit of chopped cucumber, tomato, green pepper, onion, and crutons (better if it´s dried bread that you might have left from past days) (this is an option so you can have as much as you want)

Step 1

Add everything to blender, you can add water to make it more liquid, it all depends of how you like it.

Setp 2

Keep in the fridge until it´s cold enough to be refreshing. If you do it right before eating it, you can add cold water or ice-cubes, to make it cold right away.

Step 3

You can either drink it from a glass, eat it as a soup from a bowl, or if you chopped all the vegetables, serve the gazpacho in a bowl and add the chopped vegetables and the crutons.
