A fun thing to do with fruit blossoms is to use them to infuse vodka to use as an aperitif or to make a martini. I used the blossoms of my mandarin satsuma tree (since it’s such a prolific tree, I was willing to sacrifice some of the fruit by removing the blossoms).
It’s a pretty simple process. Take a clean mason jar, fill it with blossoms. Rinse the blossoms in a strainer and then replace them back into the jar. Pour your favorite vodka over the blossoms. Screw the lid on tightly. Keep the jar in a cool, dark place. Check the mixture every few days. Smell and taste the vodka. (Do not infuse for more than 2 weeks – otherwise the taste can be too strong). Once it is to your liking, strain the vodka through a cheesecloth. Serve straight or use to create a martini.
