We highly recommend you try Sinead Hartmann’s fantastic spicy tomato sauce inspired by her garden. Her culinary prowess is a result of spending considerable time in the kitchen with her Italian mother.
INGREDIENTS
- 3 pounds of tomatoes (placed in boiling water for 2 minutes and then pealed and chopped)
- 1/2 cup olive oil
- 3 garlic cloves
- 2 chilli peppers
- 1 can of tomato paste
- Small bunch of fresh Basil, chopped
- Salt to taste
- 2 tablespoons of sugar
Cook the chopped garlic and chilli for a minute in the olive oil. Add tomatoes, tomato paste, basil, salt, sugar and pepper.
Allow to simmer for approx 1 hour.

This recipe freezes well.
