The first week of 2013 is finished and if you haven’t broken your resolutions yet, we want to make sure that you can keep your resolution to get healthy and maintain your health this year. Here is our list of the top 5 edible vegetables to grow to maintain your health:

1. Kale

If you only grow one vegetable in your urban garden, make it kale. It packs a wallop with Vitamins A, B2 & B6, C, and E, as well as copper, calcium, zinc and magnesium.

2. Tomatoes

Vitamins A, C, and E, fiber, potassium, and lycopene may be what makes tomatoes good for you, but the bright flavor and rich color will be enough to make you want to grow your own tomatoes for the rest of your life.

3. Spinach

Popeye was on to something. With Vitamins A, B, C, and E as well as magnesium, calcium and copper, you’ll be hard pressed to find a veggie that’s more flavorful and versatile while bringing so many nutrients to the table.

4. Red Bell Peppers

Not only are they sweet and delicious, red bell peppers are packed with Vitamins B and C and fiber. If you haven’t noticed, they’re also expensive at the supermarket. Grow your own and save big time.

5. Carrots

Beta carotene isn’t the only thing you’ll get out of a fresh carrot. Add Vitamin A, Vitamin C and fiber to the antioxidant goodness and you’ll be on the right track

I love to garden. I think I will add carrots to the mix this year.

I grow all but Kale, not to found of the taste. I did buy some last week to make smoothies with, not good. So I turned it into a kale salad, much better. Home grown carrots are awesome 🙂
